Here are the college ratings following rivalry weekend. I know there are the conference championship games and a few regular season games left. However I do not believe that the ratings will change that much after this weekend.
Remember Kimbo Tech is the total rating for non D-I schools, that played against D-I schools.
My suggestion if you do play a non D-I school would be to average their Points Scored and Points Allowed Average subtract 14 but keep the CGF and SOS.
That way you know who may beat Michigan in week #1.
